Our newest knife set introduces Premium Quality Hammered Damascus Steel, making it one of the most beautiful knives we have ever produced. It is inspired by the natural landscapes of the Japanese coastal zone, and the Hammered Damascus Steel represents the corroded from the ocean slopes that souround the mainland. In addition, the hammered pattern creates pockets of air between the blade surface and the food surface to aid in food release while cutting.

The Daitan Chef’s Knife is manufactured using Japanese VG10 Damascus Steel, weights approximately 240g and features a blade of 8.2″.

    Purchased this knife to replace a cheaper Komachi ceramic knife that has seen better days. I’ve been using cheap knives my whole life and decided to treat myself to something better and this Tokageh knife is what chose. The blade insanely sharp and pretty well balanced. The spine of the knife is thicker than what I had imagined but definitely makes the knife more rigid. The random dimples on the sides of the knife truly sets it apart as far as looks go but they really do function to stop foods like potatoes and other starchy foods from sticking to the blade when slicing. I’ve owned this knife for a week and find myself reaching for it more and more as my go-to knife.

    I am very happy with this purchase and hope this knife will last for many years. Hatori customer service guided me throught the purchase as I had troubles with Paypal payment

    I have never owned a premium knife before this one. It was always the “33 knife boxed set for only $33.00!!!!” variety. Let me tell you, if you do any sort of home cooking, you owe it to yourself to get this knife. It was a chore to cut meat, veggies, and fruits before. Now it feels like everything melts to the blade of this knife; Broccoli bows before me, ribeye comes and kisses my feet.

    The handle feels good in my hand and the blade has retained its sharpness since I first got it four months ago. Of course with a knife like this you should not treat it like any other kitchen knife. I always hand wash and dry it and make sure to store it in a knife holder. Take care of the knife and it will last for years.

    Bought this and the Santoku knife as a gift for a friend of mine who is a chef, it came in a really nice gift box, once I opened I can tell it is worth every penny. The knife came with its own sleeve to cover its sharp blade ( The handle has a really nice grip ). Since it is a gift I didn’t try to use it, but my friend loved it. I think it would make a great gift for any chef.

    Great value for money. Free shipping was a plus. Arrived @ Toronto in 12 days.

    I am a medical professional and a mother of two. Despite my busy schedule, I still try to cook 5 to 6 days every week for my family. Since I grew up in Asia, Asian style foods like Chinese, Japanese, Korean and Thai foods are often on my cooking menu. Preparing food takes up most of my cooking time in the kitchen. I have a good collection of Asian style knives and they really save me time in cutting, chopping and slicing.
    A month ago a good friend of mine recommended Daitan Hatori knife to me and I decided to give it a try. After trying it for a couple weeks, the biggest difference between Daitan and my other Japanese knives I found is when I slice apples, tomatoes, potatoes, cheese, etc, the slices won’t stick on the blade as much because of its special design which looks the like moon’s surface. Thus, it saves me a lot of time because I don’t need to remove the slice every single time when I cut. It also comes with a beautiful box and that makes it a pretty gift. I am planning to purchase another one for a good friend of mine who also likes to cook as a house warming gift.

– Avoid cutting bones (except fish bones) and hitting the blade on hard surfaces. Preferably use a plastic or wooden cutting board.

– Dry the knife as soon as you wash it. Do not place the knife in a dishwasher.

– In order to sharpen the blade the use of a sharpening stone is suggested. Any other tools could damage the blade.

– To retain the edge of the knife make sure to hone the knife regularly. During normal use your knife edge may roll over at some point. Honing will not remove steel but will refine the edge of the knife.

VG-10 is a cutlery grade stainless steel produced in Japan. The name stands for V Gold 10 ("gold" meaning quality), or sometimes V-Kin-10 (V金10号) (kin means "gold" in Japanese). The indication 'Cobalt steel' is sometimes used too, but that could of course also designate another steel type with Cobalt. Hitachi is the manufacturer of VG10 steel, but often the name of the Takefu factory is used, that markets the steel in laminated format.

Stainless VG10 Steel holds its edge more than any other steel used to manufacture kitchen knives. The major advantage is ability to withstand rust. VG10 also provides the ability to have the Damascus pattern created in the blade during temperament. For the above reasons VG10 is the most popular steel in the knife manufacturing industry.
