Perfect knife! I really enjoyed it

  2. JKMichael

As a retired butcher I found this knife to be of the highest standard with excellent weight and balance. The curved handle is what makes the diference!

  3. LLoyd

Very pleased with the quality of this knife. Feels top quality, and it’s nicely and evenly balanced. Excellent value for money, given the normal cost of Japanese steel knifes of this standard. Would recommend.

Shipping was a bit slow. Took 4 weeks to get to mainland Germany

  4. Greg

Guys i don’t want to fill the hols. But this knife is a pro full contact tool in any Chef hand. I work 19 mad and passion full days in the kitchen. I head this baby for seven months and sharpened only on the diamond steel . It’s still razor sharp, comfortable as hell!!!!

  5. GrahamM

Razor sharp, excellent balance, and comfortable wooden handle – an excellent knife. Delivered quickly and in an attractive presentation box – this knife would make a great gift for any cooking enthusiast. A quality product.

  6. mov3maker

Beautiful knife, sharp out the box and great to use, highly recommend!

Shipping times were ok, could be faster. USPS delivered the package a bit damaged, but the product was ok.

  7. Alexander W.

Got the Hanzo Chefs and the Cleaver, using them everyday for the past 2 momths. Excellent quality, perfect grip and superbly crafted.

Shipping was a bit slow. Stuck at German customs for about 10 days, not seller to blame thought. The knives arrived perfectly packed and sharp out of the box

  8. Kathleen D.

Amazed by the quality of this knife. I have had many chef knives in my life, but this one is definitely the best one yet. And at the right price.

Arrived to Quezon City, Philippines in just 9 days! Well packed and pre-sharped. The Hatori Kitchen account manager on Instagram guided through the order process, and helped me choose the knife that suits my standards.

Hanzo worthed EVERY Peso I gave. Would buy again

– Avoid cutting bones (except fish bones) and hitting the blade on hard surfaces. Preferably use a plastic or wooden cutting board.

– Dry the knife as soon as you wash it. Do not place the knife in a dishwasher.

– In order to sharpen the blade the use of a sharpening stone is suggested. Any other tools could damage the blade.

– To retain the edge of the knife make sure to hone the knife regularly. During normal use your knife edge may roll over at some point. Honing will not remove steel but will refine the edge of the knife.

VG-10 is a cutlery grade stainless steel produced in Japan. The name stands for V Gold 10 ("gold" meaning quality), or sometimes V-Kin-10 (V金10号) (kin means "gold" in Japanese). The indication 'Cobalt steel' is sometimes used too, but that could of course also designate another steel type with Cobalt. Hitachi is the manufacturer of VG10 steel, but often the name of the Takefu factory is used, that markets the steel in laminated format.

Stainless VG10 Steel holds its edge more than any other steel used to manufacture kitchen knives. The major advantage is ability to withstand rust. VG10 also provides the ability to have the Damascus pattern created in the blade during temperament. For the above reasons VG10 is the most popular steel in the knife manufacturing industry.

The Benefits

- High Hardness on the blade
- Very light and thin blade for precision cutting
- Anti-rust composition
- Long lasting
- Damascus pattern aesthetics

Composition

1% carbon
1% molybednum
15% chromium
0.2% vanadium
1.5% cobalt

The Sharpening

Precision sharpening is ensured with laser technology.
The blades are then hand-sharpened using whetstones.
Finally every knife is carefully inspected before it is shipped to our customers.

Pakka wood, also sold as compreg, is an engineered wood/plastic composite material commonly used in knife handles and other objects that see rough wear. It resembles conventional wood, while maintaining its antibacterial characteristic which is vital for professional knives.

The cylindrical shape of the handle allows versatile cutting strokes.
