“Seishin” is the japanese word for “Spirit”. Seishin series knives reflect the spirit of japanese tradition. The knives are carefully crafted to provide a great optical balance between the gentle feeling of wood and the rough feeling of the extremely sharp and hard Damascus Steel.
Seishin series is our most “proud of” series since we managed to integrate the “Spirit of Japan” in a single knife.

    The knife is solidly built, it feels nice and heavy in your hand. The damascus blade is nice and sharp right out of the box. The handle is majectic! All in all, a very nice knife for the price!!

    So I order this knife and the 8 inch HANZO series knife. Both fantastic blades! Very sharp. Easly slicing through very soft ripe tomatoes paper thin cuts with ease. I have worked for about 16 years as a professional Chef in high pace kitchens and catering. Lots of prep work!. And these knives are right up there with some of the really high dollar blades. The blade is a piece of art in its own right and wortb the add to any home kitchen or Chefs collection.

    Hanzo was at that moment out of stock. Received Seishin in just 4 days, the Hanzo knife followed the coming week. Very pleasant people, instant response to my mails.

    These knife is great. I have only had it for a week so I don’t know how well the edge will hold up but everything I can tell about the quality makes me believe these will stand the test of time with proper maintenance of the edge.

    What can I say, this blade is just about perfect. For the price it’s unbeatable, it’s Damascus lines and razor edge out of the box are greatly appreciated, after a full day cooking with this knife today I have to say, I’m a huge fan.

    As someone who cooks from scratch meals every night, having a sharp blade not only make cooking easier and more enjoyable but in fact, makes it safer as well. This blade after a few weeks of heavy use has left me nearly speechless every time with it’s flawless characteristics, I have knives that cost double this knife but look half as good and hold an edge just as well. Do yourself a favor and BUY THIS KNIFE. Yoshihiro makes true quality products, they have certainly made a new customer for life out of me!

    Will post updated review after I put this blade to a whetstone, so far it’s edge has held up as well as any top quality knife I have ever used before.

– Avoid cutting bones (except fish bones) and hitting the blade on hard surfaces. Preferably use a plastic or wooden cutting board.

– Dry the knife as soon as you wash it. Do not place the knife in a dishwasher.

– To retain the edge of the knife make sure to hone the knife regularly. During normal use your knife edge may roll over at some point. Honing will not remove steel but will refine the edge of the knife.

VG-10 is a cutlery grade stainless steel produced in Japan. The name stands for V Gold 10 ("gold" meaning quality), or sometimes V-Kin-10 (V金10号) (kin means "gold" in Japanese). The indication 'Cobalt steel' is sometimes used too, but that could of course also designate another steel type with Cobalt. Hitachi is the manufacturer of VG10 steel, but often the name of the Takefu factory is used, that markets the steel in laminated format.

Stainless VG10 Steel holds its edge more than any other steel used to manufacture kitchen knives. The major advantage is ability to withstand rust. VG10 also provides the ability to have the Damascus pattern created in the blade during temperament. For the above reasons VG10 is the most popular steel in the knife manufacturing industry.

Pakka wood, also sold as compreg, is an engineered wood/plastic composite material commonly used in knife handles and other objects that see rough wear. It resembles conventional wood, while maintaining its antibacterial characteristic which is vital for professional knives.
